ResponsibilitiesBreak down whole beef, pork, lamb, poultry, and fish into usable cuts for the kitchenTrim, portion, and prepare various meats to chef specifications and menu requirementsEnsure all meats are handled and stored according to food safety and sanitation standardsMonitor quality and freshness of all meat products, reporting any spoilage or concernsClean and maintain station, tools, and equipment to meet health code standardsAny other ad-hoc duties as assigned by the CompanyRequirementsProven experience in a similar role preferredKnowledge of meat preparation techniques and cutsAble to perform spilt shift, work on weekends and public holidaysAbility to work in a fast-paced environmentPhysical stamina to stand for long periodsPassion for food and willingness to learnTeam player with a positive attitude and strong communication skills
