Pastry Demi Chef – Job DescriptionPosition: Pastry Demi Chef Reports to: Sous-Chef, Owner Department: Kitchen – Pastry Work Type: Full-timePosition SummaryWe are looking for a proactive and highly organized Pastry Demi Chef to take full charge of our pastry production. This is an autonomous, single-person pastry role that requires strong communication, excellent time management, and the ability to work efficiently in an environment with high variability in customer traffic.The Pastry Demi Chef will collaborate closely with the barista and beverage team to monitor product performance, anticipate demand, and ensure consistent quality, freshness, and availability of all pastry items. This role is ideal for someone who is independent, reliable, and able to uphold high standards while adapting quickly to changing sales patterns.Key Responsibilities1. Daily Pastry ProductionProduce pastries, baked goods, and desserts according to standard recipes and quality expectations.Maintain consistent taste, texture, appearance, and freshness across all items.Manage preparation schedules to ensure products are available during peak hours.2. Collaboration With Barista & Front-of-House TeamsWork closely with the barista team to track which items sell well and at what times.Communicate daily about product stock, customer preferences, and potential adjustments.Align pastry production with beverage promotions, seasonal drinks, or special events when needed.3. Stock, Inventory & ForecastingMonitor stock levels of finished products and ingredients throughout the day.Adjust production based on real-time demand and anticipated traffic fluctuations.Perform weekly inventory checks and communicate purchasing needs to management.Maintain proper storage, labeling, and rotation to minimize waste.4. Autonomy & Workflow ManagementIndependently plan daily work schedules, production lists, and prep timelines.Ensure the pastry station is clean, organized, and fully compliant with hygiene and safety standards.Communicate any operational challenges, constraints, or needs to management in a timely manner.5. Quality ControlRegularly review product consistency and customer feedback to refine recipes or improve processes.Ensure all pastries meet the brand’s standards of excellence before they reach the customer.Qualifications & SkillsRequired Skills:Proven experience as a Pastry Demi Chef, Commis Pastry, or similar role.Ability to work independently with minimal supervision.Strong communication skills, especially in collaborating with barista/front-of-house teams.Excellent organization and time management abilities.Knowledge of pastry techniques, baking methods, and kitchen hygiene standards.Ability to adapt quickly to fluctuating sales and production needs.Preferred Attributes:Passion for pastry creativity and continuous improvement.Experience in high-volume café or bakery settings.Comfort in handling full responsibility for a pastry section alone.Proactive mindset with strong attention to detail.Working ConditionsHigh-traffic café environment with significant day-to-day volume changes.Requires early morning shifts, weekend work, and occasional holiday scheduling.Must be able to stand for extended periods and lift up to 15–20 kg.What We OfferA supportive and friendly team environment.Autonomy and ownership of the pastry section.Opportunities to propose new products and contribute creatively.Stable employment with room for growth in culinary responsibilities.Compensation:The position offers a base salary of 14,000 to 16,000 THB per month, depending on experience, along with a monthly service charge. The Pastry Demi Chef is also eligible for a quarterly performance bonus of up to 5,000 THB, awarded based on the accuracy of operational reports, effective cost control, and successful achievement of menu and production objectives.
