Job Description

KEY RESPONSIBILITIES:Prepares menu, food items based on approved plan. Makes adjustments to food items to accommodate employees and guests with allergies or specific diet concerns. Alter dishes based on consumer suggestions or requirements, while maintaining food budget under control. Set up workstations with all needed ingredients and cooking equipment. Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.). Cook food in various utensils or grillers, kitchen equipment, tools. Check food while cooking to stir or turn, ensure proper cooking methods are used. Ensure great presentation by dressing dishes before they are served. Keep a sanitized and orderly environment in the kitchen, clean as you go. Ensure all food and other items are stored properly, placing orders when needed. Completes hot meal preparation by grilling, sautéing, roasting, frying, and broiling ingredients and assembling and refrigerating cold ingredients. Executes cold food production in accordance with standards of plating guide specifications. Ensure safe operation of all kitchen equipment by following manufacturer guidelines and company safety procedures to prevent accidents and maintain a hazard-free environmentReport health & safety, environmental, and food safety hazards and near miss/incident observed in the workplace to ensure a safe and healthy working environment. To follow, apply and maintain all applicable ISO standards and requirements. REGULAR INTERNAL CONTACTS:Employees and guests in the camp facilitiesREGULAR EXTERNAL CONTACTS:GuestsMINIMUM EDUCATION REQUIREMENT:High School certificateYEARS OF RELEVANT WORK EXPERIENCE WITH MINIMUM EDUCATION REQ'T:5 years' of relevant progressive work experience, 2 years as a CookSYSTEMS/ EQUIPMENT OPERATION KNOWLEDGE:Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)TECHNICAL/ PROFESSIONAL TRAINING REQUIRED:Basic Food Safety knowledge, knowledge of various cuisine/ dishesOTHER REQUIREMENTS:Physiologically fit to work in remote site locationsCan lift without aid 25kgsGood English language skillsAdvantage if knowledgeable of country languageCOMPETENCIES:Collaborative workingTime ManagementCommunicationPlanning & OrganizingAttention to DetailBasic Budgeting & Cost ControlStock management
