Job Description

The Cost Controller is responsible for monitoring and controlling all hotel cost-related activities to ensure accuracy, transparency, and compliance with IHG and hotel financial standards. The role supports the hotel’s profitability by analyzing cost trends, evaluating variances, and ensuring proper stock management across all operating departments, particularly Food & Beverage.YOUR DAY-TO-DAY:Monitor and control food, beverage, and general store costs in line with approved budgets.Prepare daily, weekly, and monthly cost reports including consumption, variances, and cost percentages.Analyze deviations from standard costs and recommend corrective actions.Review and approve cost-related transactions, ensuring compliance with internal control procedures.Supervise and coordinate monthly and quarterly inventory counts for all storerooms, F&B outlets, and other departments.Review inventory results, investigate discrepancies, and ensure accurate valuation of stock.Maintain an up-to-date inventory system including recipes, item codes, and cost updates.Verify purchase orders, quotations, and supplier pricing to ensure consistency with cost policies.Oversee receiving procedures to ensure goods are delivered in the correct quantity and quality.Work closely with the Purchasing and Receiving teams to verify supplier invoices and cost allocations.Update and maintain recipe costing using approved standard recipes.Support F&B management with menu engineering reports to optimize profitability.Conduct spot checks in kitchens and bars to ensure compliance with portion control and wastage policies.Prepare monthly cost control reports for management and IHG regional finance teams.Support internal and external audits by providing accurate cost-related documentation.Ensure full compliance with IHG financial policies, local regulations, and hotel SOPs.WHAT WE NEED FROM YOU:Bachelor’s degree in Accounting, Finance, or a related field.Minimum 2–3 years of experience in cost control within the hospitality industry.Familiarity with IHG standards is an advantage.Proficiency in MS Excel and financial reporting tools.Strong analytical and numerical skills.Knowledge of hotel cost control systems (e.g., FMC, Adaco, Sun Systems, OPERA).Excellent communication and interpersonal skills.Attention to detail and high integrity.Ability to work under pressure and meet deadlines.WHAT YOU CAN EXPECT FROM US:We give our people everything they need to succeed.
