You’ll lead a talented, passionate team while ensuring the bakery’s legendary standards remain uncompromisingly high.The role calls for a hands-on, organized, and inspiring leader—someone who thrives in a high-volume yet artisanal environment, where attention to detail, product integrity, and creativity all shine.The position is based out of the group’s central commissary kitchen near Union Square/Chelsea, the heartbeat of production and innovation.🥐 What You’ll DoLead, manage, and mentor the production team across bread, pastry, viennoiserie, and specialty items.Maintain the bakery’s signature quality and consistency, ensuring every croissant, babka, and loaf meets exacting standards.Oversee large-scale operations while preserving the craftsmanship and soul of small-batch baking.Collaborate with ownership and R&D teams to develop new seasonal products, refine recipes, and elevate presentation.Streamline production systems, inventory, and logistics to optimize efficiency and reduce waste.Manage and train department leads, fostering a culture of professionalism, creativity, and teamwork.Partner with the leadership team on menu innovation, costing, sourcing, and production planning.Ensure full compliance with DOH, food safety, and quality-control protocols across all facilities.Lead by example, balancing creative vision with operational precision.🎯 What We’re Looking For7+ years of professional experience in pastry and/or bread production, with at least 3 years in a leadership or executive pastry role.Proven ability to manage large teams and high-volume operations while maintaining artisan-level quality.Deep knowledge of laminated doughs, bread fermentation, viennoiserie, and plated desserts.Strong technical and organizational skills—comfortable balancing the art of pastry with the business of production.Experience scaling operations and implementing systems without sacrificing creativity or integrity.Collaborative, humble, and motivational leadership style that inspires growth and excellence.Flexible and proactive problem-solver with strong communication skills.Passion for craftsmanship, sustainability, and team culture.🕰 Schedule & LocationBased in Union Square / Chelsea commissary kitchen.Mostly daytime, weekday-heavy schedule, with flexibility and autonomy over your hours.Occasional early mornings or weekends as needed during special projects or launches.💡 The CultureYou’ll be joining a supportive, stable, and passionate team with remarkably low turnover and a shared love for baking done right.
