Restaurant Manager – IKI Sushi (Opening Early December)Lead the Launch of Sydney’s Next Iconic Japanese Dining ExperienceIKI Dining Group is expanding — and we’re bringing a brand-new concept to St Leonards: IKI Sushi, a premium sushi train + omakase hybrid, powered by our central kitchen and led by Michelin-starred Chef Yomo.Opening in early December, we are seeking an exceptional Restaurant Manager to bring the venue to life, build a high-performing team, and deliver a guest experience that feels precise, warm, and unmistakably IKI.Who We AreAt IKI, we blend Japanese craft with Sydney energy — creating dining experiences that are refined, expressive, and people-focused.From IKI Dining Potts Point to our pastry, ramen, izakaya, and sando concepts, we are building Australia’s next great Japanese hospitality group.The RoleAs the Restaurant Manager, you will be the operational heartbeat of IKI Sushi. You will lead the opening, oversee daily service, own the guest experience, and drive a culture of respect, precision, and pride.Your core responsibilities include:Lead and motivate the FOH team to deliver warm, consistent hospitalityEnsure daily operations run with precision — opening, service, handover, closingDrive sales through service excellence, upselling, and guest engagementWork closely with Chef Yomo and BOH leadership to ensure seamless FOH/BOH alignmentManage rosters, labour costs, inventory, and POS systemsTrain, coach, and develop staff to IKI standardsUphold IKI brand values, presentation, and service ritualsDeliver strong financial performance and hit weekly service KPIsWho You AreYou’re a natural leader.
