Job Description

Cafe Boulud Baha Mar is in search of an experienced and passionate Wine Director to lead the Sommlier team and wine program!The Wine Director/Head Sommelier is responsible for maintaining a wine list that meets the goals set by management and for ensuring that proper service of wine according to the wine service manual. Build and manage the wine program - including purchases, invoice, and storage solutions. Experience as a Head Sommelier in a Michelin rated restaurant or Forbes Travel Guide rated restaurants a plus.

Essential DutiesWine ListCreates and maintains a beverage list that meets the goals set by management (wine and aperitifs)Proactively support and drive corporate beverage program, including wine and spirits for Dinex’s One Vanderbilt restaurantsMaximize profit by maintaining profit margins, sales mixMeets goal for inventory levels in both dollars and number of bottlesKeeps list up to date with wine trendsManage wine inventory of two venues and deliver budgeted cost of goods soldStaff TrainingTrains staff to maximizes revenue through increase sales/spendingConducts weekly training to ensure the staff knows pronunciations, origin, and grape variety of each wine on the listsTrain staff on wine knowledge and wine and food pairingEnsures staff is up to date on all additions and deletions from the listConduct tasting and training for service team members of both restaurantsManage and schedule teams of sommeliers of Le Pavillon and Centurion NYPurchasing and InventoryMaintain organized and clean beverage storeroomEnsure that all alcoholic beverage deliveries are checked inVerify all alcoholic beverage invoicesProcess all invoices in a timely manner, following up on any billing disputesEnsure that all security controls are adhered toSets proper controls and ensures they are adhered toMake changes to wines in POS system as necessaryMaintain POS perpetual inventoryResponsible for beverage inventory integrity and theftPartake in scheduled inventory audits and variance managementServiceParticipate in daily service while delivering exceptional wine experience to the guests and membersAssist wait staff with wine service when appropriateMonitors wine service and trains according to service manualCompetencies & QualificationsPrevious experience in a fine dining environment (5 years)Outstanding knowledge of winesExtensive knowledge of and interest in French cuisineOrganizational skillsEffective time managementProfessional demeanorPositive and clear written and oral communication skillsAbility to work well in a team environmentAbility to engage guests successfully and build a relationshipImpeccable grooming as defined by management and dress codeMore detail about Café Boulud - Baha Mar part of The Dinex Group, the Restaurant Group of Chef Daniel Boulud, please visit https:
