Reports to: Founder & CEOAbout TabchilliTabchilli is Dubai’s first dedicated fermentation company, producing probiotic-rich foods such as kimchi, sauerkraut, pickles, and fermented hot sauces. We are scaling rapidly and need strong hands in the kitchen to maintain quality, output, and discipline.Role OverviewWe are looking for a Head of Production & R&D Chef – Fermented foods to run day-to-day operations in our fermentation facility. This role is hands-on: managing the kitchen team, ensuring hygiene and HACCP compliance, controlling wastage, and driving production to meet targets.Key ResponsibilitiesRun the daily fermentation & production scheduleSupervise operation staff (5-7 team members) with discipline and accountability.Ensure HACCP, food safety, and hygiene logs are completed and enforced daily.Manage yield tracking, wastage reports, and cost of goods for each batch.Coordinate with the purchasing team for inventory planning and raw materials.Lead the stewarding/cleaning crew, ensuring spotless and compliant kitchen operations.Provide daily/weekly reports on output vs. production targets.Be hands-on: support in cutting, brining, mixing, fermenting, and packing when required.Train and mentor junior staff for continuous improvement.lead our R&D development with the supervision of the founder.Requirements3–5 years’ experience in a hotel, central kitchen, or commissary operation.Strong background in food safety and HACCP.Proven ability to manage and motivate a kitchen team.Experience with cost control and wastage reduction.Comfortable with fast-paced, high-volume production.Hands-on mentality — willing to work alongside the team, not just supervise.What We OfferCompetitive salaryGrowth opportunity in Dubai’s fastest-growing fermentation brand.Training in fermentation techniques and exposure to innovative food production.A driven, entrepreneurial environment with real impact.
