Senior Sous Chef - Dim Sum Fine Dining

Job Description:In collaboration with our distinguished Head Chef, we are seeking a talented Senior Sous Dim Sum Chef to lead and manage our designated culinary team. This role will challenge and refine your skills in producing the finest culinary experiences in the Dim Sum section of the Fine dining Chinese kitchen, while overseeing all aspects of the respective kitchen.Responsibilities and Duties:Ensure the quality of all food production according to established recipes.Minimize and efficiently utilize all waste products to control costs.Ensure proper handling, storage, and usage of raw and cooked materials.Report any maintenance issues to the Head Chef.Maintain workplace safety by adhering to all relevant health and safety requirements.Create new Dim Sum menus, reinvent existing menus, and conduct menu engineering.Ability to handle substantial Dim Sum production to supply multiple outlets.Oversee all culinary dishes prepared in the Dim Sum section.Collaborate with the restaurant manager to ensure the highest standards in guest experience.In-depth knowledge of culinary specialties.Work on recipe costing and report to the Executive Chinese Chef.Lead and direct team members in effective methods, operations, and procedures.Ensure the work environment is clean at all times.Maintain and continuously improve food standards and presentations.Follow HACCP standards, ServSafe Certified. Qualifications:Minimum 4 years of experience in Dim Sum production.Bachelor’s degree or any culinary degree / Open to Chinese native speakers.Basic knowledge of checking the quality of raw materials and food production.Organized and well-planned.Ability to successfully train and coach a team.Strong commitment to teamwork and customer service.Meticulous attention to detail to achieve operational excellence.Background in 5-star hotels from China, Hong Kong, or Macau.Remuneration and Benefits:Competitive compensation of 120,000 - 150,000 THB gross monthlyStimulating working environment in the heart of BangkokThis position is based on a 5-day workweek.
